La Pavoni
Founded in Milan in 1905, La Pavoni built the archetype of the hand-pulled espresso machine and still makes it: chrome-and-brass direct-lever machines where you set the pressure yourself, arm on the lever, shot by shot. The Europiccola and Professional have anchored home espresso for six decades, now joined by pump-driven, PID-controlled prosumer machines like the Cellini.
